Deep Fried Peanut Butter & Jelly Sandwich
Deep-Fried Peanut Butter & Jelly
Ingredients:
• Peanut Butter
• Jelly
• Bread (I used 100% wheat and it worked nicely)
• 2/3 cup water
• 1 egg
• 2/3 cup all-purpose flour
• 1 3/4 teaspoons baking powder
• 1/2 teaspoon salt
• Oil for frying
• 1 tablespoon confectioners' sugar for dusting
Directions
1. In a medium bowl, whisk together the egg and water. Combine the flour, baking powder, salt and pepper; whisk into the egg mixture until smooth. Set aside in the refrigerator.
2. Heat oil to 350 degrees
3. Make your peanut butter jelly sandwiches (You could probably make 4 sandwiches with the amount of batter you will have)
4. Cut sandwiches in quarters and dip in batter, then place in oil.
5. Deep fry until all sides are golden brown
6. Dust with confectioners’ sugar
7. Enjoy

Great for you! Sugar is a major culprit in bad health, but watch for those carbs too! Those little bastards sneak in the back door via white bread, pasta, cereal and potatoes! Carbs = sugar … and for me, Type 2 Diabetes! Moderation is the key to life and congrats to taking a step in the right direction!
Best wishes in your journey to a reduced sugar existence. Not an easy thing to do but well worth the effort. Sugar is my addiction of choice and not an easy thing to give up. :)
Thank you both! I am very excited about my journey to a better health. It is interesting getting into a new mindset, I really am having to reprogram the way I think about food. It is a totally good thing and I appreciate the support!

I've always been a fan of peanut butter, so when I saw this recipe I immediately got excited. I tried it out and it was really really good. A little greasy but man this is the best. Thanks.
