I love waffles and lucky for me, so does everyone else in the house. Usually we make the normal ones - just plain ol' classic waffles. Yum! As I was mixing the batter yesterday I noticed a sad little banana, whose days were very numbered, sitting in the fruit bowl. In he went. Then I remembered the extra chocolate chips I had - they got tossed in. Nutmeg? Why not, I ended up buying two whole jars of it during the holidays by mistake... Kapow! We ended up having Banana & Chocolate Chip Waffles with Nutmeg. So good that I had to share. :)
Banana & Chocolate Chip Waffles with Nutmeg
Ingredients
2 cups pancake mix
1 1/3 cup milk
2 tbsp vegetable oil
1 egg
1 banana (ripe)
1/4 tsp nutmeg
1/3 cup semi-sweet chocolate chips
Directions
1. Mix everything but chocolate chips together in blender until well combined
2. Add chocolate chips and pulse blender a couple of times to mix
3. Cook waffles according to your waffle maker
4. Enjoy!
