General Mills Monster Cereal {available for Halloween!!}

We all had our favorite General Mills Monster Cereal when growing up, right?

There was Franken Berry {my favorite}, Count Chocula, Boo Berry, Frute Brute and Fruity Yummy Mummy to choose from - trust me, I know the decision was not easy. They were all appealing in their own ways, from the unique flavors to the adorable characters on the box. If you were fans of Frute Brute and/or Fruity Yummy Mummy, then you know they were discontinued - only to go down in cereal history. Until now... Right now, all FIVE General Mills Monster Cereals are available at Target in retro packaging. {Retro packaging is one of my biggest weaknesses...}

How neat is that? This is the first time that all FIVE of the Monster Cereals have been available at the same time. Plus, if you purchase THREE Monster Cereals by Halloween you will get a free Monster Bash magazine that is LOADED with Halloween fun. The best part is that you don't need to mail anything in - the magazines are displayed right alongside the Monster Cereals. Just grab your THREE Monster Cereals and your Monster Bash magazine and head to the cashier. Easy-peezy-lemon-squeezy. Inside the Monster Bash magazine there are recipes for cocktails, like Black Widow Martini, and main entrees, like Spooky Spiderweb Pizza. There are also some fun recipes to make with Monster Cereal.

One of my favorite features in the Monster Bash magazine is an article on how to roast pumpkin seeds - including 13 delicious recipes. I can't wait to try the Sesame Ginger and Chile Lime!

Now that I have these three boxes of cereal I am going to make some of the cute recipes included in the Monster Bash magazine. My kids love monsters and scary stuff year round, so this little magazine will be used throughout the year in my house.

Hope you have a happy and safe Halloween with your little monsters!!

#GetHimFed Fridays #13

Welcome to #GetHimFed Friday hosted by Anyonita Nibbles and myself! A place to share and find new recipes that are "man-pleasing". I am so happy you stopped by for the fun and hope you have a nice weekend!

We have all heard the saying, “The way to a man’s heart is through his stomach.” It’s true – and any good woman knows it! Not only do men love to satisfy their hunger with something delightful on the palate, they are also in love with the fact that their meals are made, with love, by the women in their life. Sometimes they are even eager to please back after tasting a recipe that was whipped up for them – and those are the ones we are looking for at #GetHimFed!

Here are the ways you can participate with #GetHimFed:
1. Link up a delicious, man-pleasing recipe. It doesn't have to just be hamburgers or nachos or hot wings - it just has to be anything edible that pleases the guy in your life. The recipes that leave him silent at the table because the food is too good to stop eating. We want the goods here!
2. Are you on Instagram? Post pictures of your meal – from preparing to being eaten by your man, post it on Instagram with the hashtag #GetHimFed and you could be featured on next week’s Social Media(S&M) Features! Posts to Instagram, using the #GetHimFed hashtag, will be reposted via InstaRepost – which means more exposure for you!!
3. Leave a comment. Since you were going to do that anyway, include what your man will do for you after indulging in whichever meal(s) you are sharing. Maybe he did the dishes? Gave you a foot massage? Let's share with each other and maybe get some tips out of this!

With all that said, let's get our freak party on!

Caramel-Apple Biscotti with Pecans {Recipe}

I am a member of the Collective Bias® Social Fabric® Community. This shop has been compensated as part of a social shopper insights study for Collective Bias and their client.

One of our favorite things to do in Fall is to load the kids up in our van and head to a little place called Apple Hill in El Dorado County, California. Apple Hill is a group of over 50 Apple orchards, right next to each other, with countless apple products being offered in the Fall months. Our regular purchase at Apple Hill is a half bushel of Apples {24 pounds} which will last us about two weeks. I don't plan out how long the apples are going to last us and it is inevitable they will be gone before our next jaunt up the hill. This is when we need a quick apple-fix - something closer than 60 minutes away. This is when I head over to my local Walmart produce department and stock up on a variety of Apples to hold the family over to our next trip into Apple Country.

The produce at Walmart is beautifully displayed, nicely priced and fully stocked whenever I am there. {which is more than I should probably admit!} There is a great selection of pre-packaged produce as well as the normal fresh choices and also a decent selection of Organic options. On my most recent trip to the Walmart Produce department I picked up a mix of Apple varieties for both my family to eat and to make Caramel-Apple Biscotti with Pecans with.

This is a real easy recipe, especially with the use of Bisquick. It's pretty much just mix and bake - the hardest part of prep being the peeling and cubing of one apple. The end result is a biscotti that is perfect for pairing with coffee or egg nog during the months of Autumn. Using different apples will result in different flavors - play around and see which one(s) you like best!

Caramel-Apple Biscotti with Pecans
(PRINTABLE RECIPE)
Ingredients
2 tablespoons butter, softened
⅓ cup sugar
1 teaspoon almond extract
½ teaspoon vanilla extract
1 egg
1 egg white
1 ¾ cup Bisquick
1 cup apples, cubed small
1 package(11 oz.) Caramel Bits
2 tablespoons water
1/2 cup pecan pieces
Directions
1. Heat oven to 325. Grease baking sheet.
2. Cream together butter and sugar
3. Add extracts and eggs, beat until combined
4. Fold in apples
5. Form a log on baking sheet. Bake for 35 minutes or until golden brown.
6. Let cool. Slice into ½” slices and place back on baking sheet.
7. Turn oven down to 300 and bake biscotti for additional 20 minutes.
8. Let cool.
9. Heat Caramel Bits and Water in medium saucepan until melted, stirring constantly. Dip ends of biscotti in caramel and then sprinkle with pecan pieces.

Pumpkin-Cranberry Cupcakes with Peanuts

Disclosure: This post is sponsored by Good Cook, as part of the Good Cook Kitchen Experts program. All opinions are honest and 100% my own.

With the Fall weather here it seems that you can't throw a cat out of a window without hitting something pumpkin-flavored. From coffee to doughnuts to beer - it's all been enchanted with pumpkin goodness. Heck, I even found Pumpkin Egg Nog the other day. Yes, I bought it. I've got the pumpkin bug and am doing my best to try everything pumpkin I come across! When asked to make some cupcakes for a Halloween event, you know I had to make some out of pumpkin. I had to.

Alas - Pumpkin-Cranberry Cupcakes with Peanuts!

My kids are in love with Peanuts as I am with Pumpkin, so we threw some of them in too. And who doesn't love cranberries in Fall? They are a taste of the season! {and I had an extra bag sitting in the pantry...}

I totally got lazy and used frosting from a can. It was even premeditated laziness as I bought it from the store just for this recipe. And although I was feeling a bit lazy the day I made these - that had nothing to do with the fact I used whole peanuts instead of chopping them up. It was an experiment and it turned out amazing. The cream cheese frosting with pumpkin, whole peanuts {no shell - I was in no way that lazy!} and cranberries is a perfect combination, each flavor complimenting the others!

I loaded up my cupcakes into this adorable Halloween Cupcake Stand from Good Cook and fell in love! I want one of these adorable stands for every season. {even the 4th of July!} If you like baking {especially for the holidays} I suggest checking out what Good Cook has available in their Sweet Creations line - especially for baking, dessert making, and holiday parties. The cupcake liners shown are also from the Sweet Creations line - seriously, so much awesome stuff! If you are interested in purchasing ANY of the Sweet Creations Halloween items from goodcook.com, use coupon code HAUNTED23 for 25% off!

1. Heat oven to 350. Line muffin pan with cupcake liners.
2. Whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

I am a member of the Collective Bias® Social Fabric® Community. This shop has been compensated as part of a social shopper insights study for Collective Bias and their client.
Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

This year we have decided to mix two of the most awesome things about Halloween together - Trick-or-Treating and Costume Parties! With 2 kids of Trick-or-Treating age, it's a no-brainer what we are doing Halloween night - but why not throw a party that night too? Everyone will already have their costumes on and it would be so much fun to spend the night, making the trick-or-treating rounds, with our closest friends and family. So many laughs and memories to be had! I just needed to plan this party and wanted to do a quick test run. I headed to Save Mart for some Fresh Finds and to get inspiration for my party list.

I had already decided to make something from pumpkin. Pumpkins and Halloween go hand in hand, so it just seemed natural. You could imagine the excitement I had when seeing this display of pumpkins in the Save Mart produce department! {For other creative ideas on how to use the fresh produce found at Save Mart, check out their Fresh Finds page!}

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

You didn't think I made the Pumpkin Soup with Beef Bacon & Cheese from canned pumpkin, did you? This is fresh y'all! There were real pumpkins harmed during the production of this blog post.

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

Lol.

The base of the Pumpkin Soup with Beef Bacon & Cheese is pumpkin puree, which just happens to be a breeze to make from scratch. First, you need a pumpkin and a big knife. I used a regular ol' big pumpkin, the kind that you would buy to carve a jack-o-lantern from. There are specific pumpkins to use for Pumpkin Pie that are smaller and more round, but for this recipe you can use one of those big guys.

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

First, cut the top off the pumpkin and pull all seeds and guts out. Then, using a spoon or snazzy Pumpkin Scraper, scrape the inside surface of the pumpkin to remove anything your fingers can't pull out. I save the seeds to roast later, they are a delicious treat and so good for you!

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

Next up will be to roast the pumpkin. Set the oven at 350 and place pumpkin pieces on baking sheet(s). I used one regular baking sheet and a cast iron pizza pan for my pumpkin, they both worked great and I didn't preferred one over the other.

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

Bake for about an hour, or until a fork can very easily pierce the pumpkin pieces.

After the pumpkin pieces have cooled enough to handle, peel the skin off and cut pieces into big chunks. You are almost done making pumpkin puree!! All that is left is to use a blender or food processor to complete the process. Put the pumpkin chunks into the weapon of your choice, along with enough water to help mix, and process. When the pumpkin puree is smoothly flowing through the blender or food processor - it's done. I was able to yield 14 cups of puree from a 12 pound pumpkin!

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

Before making the soup, I prepped the pumpkin bowls. These are smaller pumpkins that I would just normally use for decoration.

Just like the big pumpkin - cut the tops off.

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

Pull out the seeds and guts {this is a fingertips-type job} and rinse with water.

Cover in plastic wrap and stick in fridge until ready to use.

Then it was time to cook up that Beef Bacon! Finding this at Save Mart was like finding a treasure - I had never heard or even dreamed about Beef Bacon before seeing it at the store. Have you ever tasted fat, from a grilled steak, that was absolutely delicious? That is what this bacon reminds me of.

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

Here is the Beef Bacon in all it's glory!

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

I chose to make the Pumpkin Soup with Beef Bacon & Cheese because all of it's elements could be prepped beforehand, leaving me plenty of time to focus on my kiddos and not getting food on the table. The soup is a cinch to make - just pumpkin puree, vegetable stock, garlic, heavy cream, bacon and cheese. Heat it all up together and serve in the cute little pumpkin bowls that were prepped earlier in the day. I am so excited about serving this dish to our friends and family!

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

While at Save Mart I was looking for items that were already prepared yet fresh and delicious. I am in love with their in-store brand, Pacific Coast. I picked up a Fruit Mix tray from the produce department and some salsa to go with tortilla chips. Again, no prep is going to make hosting a Pre Trick-or-Treating Party stress-free, leaving more time for fun!

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

Of course, I couldn't leave out sweets. But since we will have loads of candy by the end of the night, I opted for some cupcakes instead. I found the cutest fall-themed cupcakes at Save Mart and had to grab them! There are chocolate and vanilla versions with toppers such as leaves and bats - so cute. They are small and perfect for not getting over loaded on sweets before a night of candy.

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

And I must add that they are a little sweeter since I don't have to worry about making them.

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

For our beverage I mixed together Pacific Coast Blood Orange sparkling soda and Sunny Select Cranberry Juice. Pouring in the cranberry juice first, the sparkling soda floated on top - very cool effect for Halloween! The taste was awesome and think it will go over great for a crowd of people.

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

I gathered up all of the delicious Fresh Finds from Save Mart and tried to figure out how I would display it all for our guests. A few things may be changed from now to then, but I liked the end result. I am definitely going to need some plastic spiders for the spider webs in the back ground and a festive tablecloth.

Pumpkin Soup with Beef Bacon & Cheese and a Party Plan for Halloween Night #FreshFinds

I am looking forward to Halloween more than usual this year and can't wait to share the night with our loved ones. A test run of the night was a great idea and makes me confident that I won't forget anything. Now that the hard work is done, it's time to pick out some costumes!!

Pumpkin Soup with Beef Bacon & Cheese

Harnessing the Power of the Peanut

We all know the Planters mascot, Mr. Peanut, right? He is the dapper peanut equipped with a top hat, monocle, white gloves, spats, and a cane. He is emblazoned on Planter's packaging and always has a warm smile while tipping his hat to you. You know who I am talking about, I am pretty confident. After all, Mr. Peanut has been around since 1916 and is one of the best-known icons in advertising history. Well, Mr. Peanut has some messages to spread and has started making YouTube videos {gotta stay with the times!}. Here is one of my favorites:

Caramel Apple-Popcorn Balls with Peanuts

To celebrate Good Cook's Free Popcorn and Popcorn Giveaway on Facebook, as part of a sponsored post for Good Cook, I made Caramel Apple-Popcorn Balls with Peanuts. #goodcookcom

One thing I love about Fall is our family's trips to Apple Hill. Apple Hill is a group {55 to be exact} of apple orchards in El Dorado County. It's the cutest place with awesome things to do with kids in the Fall, such as a fishing pond, pony rides, pumpkin patch(es), hay rides and more. One of my favorite things to do in Apple Hill is visit the fudge shop and buy delicious caramel apples to celebrate the Fall season. They are so beautiful and delicious - it really doesn't matter how sticky my hands or face get while enjoying a classic Fall treat!

When I was recently asked to create a recipe using homemade popcorn balls, the decision came all too fast - Caramel Apple-Popcorn Balls with Peanuts. The popcorn balls include chopped dried apples, peanuts and cinnamon; all held together with a homemade sugar syrup that I colored green with food color. I then rolled them in melted caramel {I had no idea and feel silly knowing now how easy this is to do!} and let them set in the fridge. So easy and so tasty! I made two batches, one with and one without peanuts, both were wonderful but I did prefer the addition of the peanuts.

Let me share how easy these beauties are to make!

First you need some popcorn. 6 cups to be exact.

In a heatproof bowl, spray with cooking spray and add the popcorn, chopped dried apples, peanuts and cinnamon. Mix well. Set aside.

Over high heat, bring sugar, light corn syrup, water, vinegar and salt to 260 degrees.

Remove from heat and add food coloring. {I made two batches and liked the color of 7 drops of green the best.}

Immediately pour over popcorn mixture and start to mix. I used a Good Cook rubber spatula which worked wonderfully! The idea is to get every piece coated.

Next, it was time to shape the popcorn into balls. Since this will be done easiest while syrup is still warm, do it as fast as possible!

I used a Good Cook Popcorn Baller which not only made perfect balls, but also made working with the hot mixture an easy feat. Just put some popcorn in the baller and press the lid down. Easy as pie. :) {If you are interested in your own Popcorn Baller, use coupon code: POPCORN to save 25% on one at goodcook.com or go check out their Free Popcorn and Popcorn Baller Giveaway on Facebook!}

Then insert popsicle sticks and let set in fridge for 30 minutes.

In a microwave-safe bowl add 14oz caramels {the individually wrapped ones} and 2 tablespoons of milk. Microwave, on high heat, for 1 minute then stir and cook for an additional minute. Stir again and let sit for about a minute and start rolling the popcorn balls in the caramel. It will be extremely hot, so please be careful! Place on parchment paper and set in fridge for an additional 30 minutes.

Look how cute these Caramel Apple-Popcorn Balls with Peanuts look in these Good Cook treat bags! I am totally going to make these for a Halloween Party that we attend every year. So cute and the kids are in love with the characters on the bags.

Caramel Apple-Popcorn Balls with Peanuts
(PRINTABLE RECIPE)
makes 4 servings
Ingredients
6 cups white popcorn, popped
1¼ cup dried apples, chopped
1 cup dry roasted peanuts
¾ teaspoon ground cinnamon
1 cup granulated sugar
⅓ cup light corn syrup
⅓ cup water
1 teaspoon vinegar
1 teaspoon salt
green food coloring
4 popsicle sticks
14oz caramels {the kind you need to unwrap}
2 tablespoons milk
Directions
1. Spray heatproof bowl with baking spray and add popcorn, apples, peanuts and cinnamon. Mix well.
2. Over hight heat, bring sugar, corn syrup, water, vinegar and salt to boil. Heat to 260 degrees.
3. Remove from heat and add food coloring.
4. Pour syrup over popcorn mixture and mix well until all popcorn, apples and peanuts are coated.
5. Shape into balls. {I used a Good Cook Popcorn Baller which worked wonders!} Insert sticks into each ball. Let set in fridge for at least 30 minutes.
6. In microwave safe bowl, add caramels and milk. Heat in microwave for 1 minute, then stir. Heat for another minute, stir and let sit for a minute.
7. Roll popcorn balls in melted caramels. Set on parchment paper, on a flat surface and chill in fridge for at least 30 minutes.

Convienent Coffee for a Trip to the Park #Rubi2Go

Hungry Harps spent a morning at a local park, enjoying Seattle's Best coffee from a Rubi kiosk, as part of a sponsored post for Collective Bias and their client. #Rubi2Go

Convienent Coffee for a Trip to the Park #Rubi2Go

Have you seen those coffee kiosks in your grocery store? They offer Seattle's Best fresh ground coffee that is brewed to order. Yes, brewed to order in that little kiosk using a French Press style brew chamber. Pretty awesome, huh? If you haven't seen them, the coffee kiosks look like this:

Convienent Coffee for a Trip to the Park #Rubi2Go

I have been hooked to these kiosks since one was put in my local grocery store. The price is awesome at $1 to $2 {depending on beverage}, it's convenient coffee {perched right inside grocery store doors} and there is a delicious variety of beverages to choose from {from hot chocolate to seasonal flavors!}

Convienent Coffee for a Trip to the Park #Rubi2Go

My husband just recently started his quarter break from school {he is a college instructor}, so there will be many mornings at our local park in the two weeks. The boys love going to the park with their Daddy and going crazy on the jungle gym. These Three Stooges are goofballs together and have a blast challenging each other at the playground.

Convienent Coffee for a Trip to the Park #Rubi2Go

This past weekend, we decided to pick up some doughnuts and coffee before heading to the park. Instead of spending an arm & leg at a coffee shop, we headed to our local Save Mart and stopped by the coffee kiosk inside. I had recently heard of an offer where you can text BEAN2CUP to 727272 to receive a free cup of coffee - bargain!! The promo code was text to me almost instantly and I had a cup of coffee in my hands in what seemed like just seconds.

Convienent Coffee for a Trip to the Park #Rubi2Go

My husband and I both ordered the Pumpkin Spice flavor and I can tell you that we will both be getting it again this Fall. True story: On the way home from the park we had to stop by Walmart to pick a couple things up and my husband mentioned getting another coffee because "it's only $2" {his words, not mine}. I love that we both share the addiction of Rubi coffee kiosks together now! hee-hee

Convienent Coffee for a Trip to the Park #Rubi2Go

It was possibly one of the best trips to the park, ever. Daddy took the boys to the playground and I sat at the picnic table waiting for the babies to wake up to take them for a walk. I enjoyed the sounds of the park; from the rustling of leafs to dogs barking to kids laughing, it was so peaceful! Sipping on my Seattle's Best Pumpkin Spice, I kicked my feet up and was able to relax. {Can't we do this everyday?!?} The babies woke up so we started our walk, with my coffee in the cup-holder of course! It was a beautiful day - can't wait to do it all again.
