Jalapeno-Parmesan Crusted Chicken Fingers


Happy New Year! It's the first day of the year and I'm here to cross an item off of my 2015 Recipe Bucket List - Hellman's Parmesan Crusted Chicken. But how boring would it be to not try my own twist on the recipe? So I made two batches of Parmesan Crusted Chicken Fingers, one was the original recipe and the other had jalapeños, garlic powder, onion powder and more parmesan cheese added to it. These Jalapeño-Parmesan Crusted Chicken Fingers have a perfect zesty kick and would make a great finger food for parties, snack-time or a favorite of ours - family movie night.


I've been dying to Hellman's Parmesan Crusted Chicken since I first heard of it - but just hadn't gotten around it. Let me tell you, this is an awesome way to prepare chicken and is hardly any work at all. It's simple to make and FULL of flavor. We enjoyed our Jalapeno-Parmesan Crusted Chicken Fingers with a homemade mustard dipping sauce that ended up being the perfect accompaniment. {recipe to come soon - still need to make a couple perfections to the mixture} - but they would also taste fabulous dipped in ranch dressing or without a dipping sauce at all. 


Jalapeno-Parmesan Crusted Chicken Fingers

Ingredients
3 chicken breasts, sliced into 1” strips
½ cup Hellman’s or Best Foods Real Mayonnaise
½ cup shredded parmesan cheese
2 tablespoons chopped jalapeños, plus more to top each chicken finger with {I used Mezzetta Deli Sliced Hot Jalapeño Peppers}
½ teaspoon garlic powder
¼ teaspoon onion powder
2 tablespoons Italian seasoned breadcrumbs
Directions
1.Heat oven to 350.
2.Mix together mayo, cheese, garlic and onion powders.
3.Place chicken strips onto baking sheet, use two to avoid any overcrowding.
4.Evenly spread mayo mixture over chicken strips. I ended up using my fingers to help distribute evenly. Sprinkle breadcrumbs over the top and place 1 slice of jalapeño on top of each chicken finger.
5.Bake for about 15 minutes or until cheese has started to bubble and turn golden brown.
6.Remove from oven, let cool a little before eating and enjoy!!
