Although I sure do miss the cold weather of Wintertime, there is something about the crisp, fresh air of Springtime that can't be beat! The mornings are the best - especially for heading out to your local farmers market. We have several in our local area to choose from, all of them unique and wonderful! This past weekend our family headed out to explore the treasures at one of our favorite farmers markets and to pick up ingredients for these Carne Asada Sweet Potato Fries. My kiddos have recently started requesting the Carne Asada Fries when we dine-out at our favorite Mexican restaurant - but let's be honest, it's not a healthy dinner option. The Carne Asada fries are deep-fried russet potato fries smothered in cheese, carne asada, guacamole topped with more cheese. I decided to healthify this entrée by adding fresh produce from the market and using less meat and cheese - and by ditching those greasy, fried french fries with all-natural Sweet Potato Fries.
The flavors of the sweet potatoes go together perfectly with the spiciness of the jalapeños, radishes, onions, cilantro. I'm talking match made in heaven perfectly. The carne asada, cheeses, sour cream + guacamole are the perfect accompaniment to the celebration of flavors that will be dancing around in your mouth! Before making these Carne Asada Sweet Potato Fries I had serious hopes that the flavors would come together seamlessly and I am so happy to announce that they went together better than I imagined. Score!
Quite possibly the best part about this recipe for Carne Asada Sweet Potato Fries is that I didn't have to make the Sweet Potato Fries from scratch. No siree! I had the help of Alexia Foods, the maker of all-natural gourmet-inspired frozen foods. Just like the produce I find at the farmers market, I can enjoy quality ingredients with Alexia products. Along with the Sweet Potato Fries with Sea Salt, a couple of my favorite Alexia products are their Rosemary and Sea Salt Fries and Crispy Onion Rings. Lucky for me, my kiddos love them too. Score, again!
These Carne Asada Sweet Potato Fries were a refreshing change-up from the traditional Carne Asada Fries that my family is accustomed to. Using the fresh ingredients really made a difference, creating a delicious explosion of flavor. Plus, it was easy to prepare - most time being taken up by ingredient prep. My mind is already reeling on what ingredients I could top the Crispy Rosemary Fries with Sea Salt with. Chicken? Oh my, maybe Lobster?! In addition to the tastiness, it was such a fun dish to eat that it's definitely going into our regular meal rotation.
Carne Asada Sweet Potato Fries
{PRINTABLE RECIPE}
makes 4 servings
Ingredients
1 20oz package Alexia Sweet Potato Fries, cooked according to package.
1 cup mexican cheese blend, shredded
1 cup grilled carne asada {I use this recipe}
½ cup red onion, diced
10 cherry tomatoes, chopped
2 radishes, sliced
¼ cup sour cream
¼ cup guacamole
2 jalapeños, sliced {more if you like it spicy!}
½ cup cotija cheese, crumbled
Directions
1. Heat oven to broil.
2. Place 4 oven-safe serving plates on baking sheet. Evenly divide sweet potato fries among the plates, top each with ¼ cup cheese. Place in oven until cheese is melted, remove from oven.
3. Evenly divide ingredients over plates of fries, in order listed in ingredient list.
4. Enjoy!
