I love summer mornings. The start of a new day - the fresh air outside, the sounds of birds chirping, the quietness. It's like the calm before the storm around my house. Everyday. With 4 kids, my tranquil moments come far and few between. So I soak up the morning-time, enjoying it right down to the last minute that I can - then it's off to the races. When the kids get up it is "go-time" around our house, especially during summertime. Go, go, go! The Overnight Tropical-Cherry Oat Parfaits were so easy to put together and turned out looking and tasting fabulous. By allowing the oats to sit in the yogurt overnight they are softened, creating a fabulous texture to be served along with chunks of fresh fruit. The yogurt used in this recipe is mixed together with cherries, pineapple, coconut and macadamia nuts - giving it a fruity tropical flavor. Just pack the ingredients into a jar/cup, seal and let sit in the fridge while you sleep. Easy, peasy. These are so great for saving time in the morning!!


Overnight Tropical-Cherry Oat Parfaits
{PRINTABLE RECIPE}
yields six 8oz. parfaits
Ingredients
2 cups greek yogurt
1 cup old-fashioned oats
¼ cup sweetened coconut
¼ cup chopped macadamia nuts
¼ cup crushed pineapple
2 tablespoons milk {i used coconut}
1 cup chopped cherries
30 cherries, pitted
1 cup pineapple tidbits
Directions
1 In mixing bowl, combine yogurt, oats, coconut, macadamia nuts, crushed pineapple and chopped cherries. Mix well until well combined.
2 In 8oz jar or cup {or any container that suits you!}, place 2 tablespoons of yogurt mixture into bottom of jar and press down. Divide pitted cherries and pineapple tidbits over 6 cups. Top with remaining yogurt until cups are full. {there may be yogurt mix leftover, it can stay good for up to 3 days in refrigerator} Cover cups and place in fridge overnight.
3 Garnish with any leftover ingredients, serve and enjoy!


Although I am a winter-girl through and through, I gotta admit to loving a few things about summertime. Fresh fruit, long days and corn dogs. Yep, I'm all about those state-fair breaded goodies and it's something I look forward to every year. So, needless to say, I was SO excited to see these new Foster Farms® Pancake Wraps! It's like having a corn dog for breakfast, but with breakfast ingredients - maple-sweet pancake batter wrapped around a savory pre-cooked turkey sausage link. Between pulling the Overnight Tropical-Cherry Oat Parfaits out of the fridge, zapping the Foster Farms® Pancake Wraps in the microwave and pouring maple syrup into small dipping cups - my breakfast prep time was less than 10 minutes. Clean up was even easier. This was such a fun, easy and delicious breakfast - perfect for these activity-packed days of summer!!


We tried Foster Farms® Pancake Wraps Original Sausage and Pancake, however there is also a Foster Farms® Pancake Wraps Sausage and Pancake Bacon, Egg and Cheese variety available. I found both varieties at my local Walmart, in the frozen section next to the corn dogs.
