Everyone needs a perfect potluck dish - this is mine.
Don't you love when you take a dish to a party/potluck/picnic/etc. and everybody loves it? There is something oh-so satisfying about seeing people go back for seconds {and sometimes thirds} of a dish you made and brought to a get-together. Not to mention leaving with an empty casserole dish - no leftovers. This is that recipe. The recipe that people will be asking for, while shoveling forkfuls into their mouths. Any not only is this recipe for Loaded Mashed Potatoes a crowd-pleaser but it consists of only 5 ingredients!
Your shopping list: 3lbs of potatoes, 1lb of bacon, bag of 2 cups shredded cheese, 16oz sour cream and 1 bunch of green onions. That's it! {you have salt and pepper on hand, right?}
Loaded Mashed Potatoes
{PRINTABLE RECIPE}
Ingredients
1lb bacon
3lbs russet potatoes
16oz sour cream
2 cups shredded colby jack
1 bunch of green onions, chopped {about 5}
Directions
1 Cook and crumble bacon. {I like to use my food processor to make the bits a tad smaller} Set aside, reserving ¼ cup to top potatoes with.
2 Heat oven to 350.
3 Peel, quarter and boil potatoes until they are fork tender.
4 In stand mixer add potatoes and sour cream, using whisk attachment whip potato mixture until smooth. Season with salt and ground black pepper to taste. Change stand mixer attachment to beater and add 1¾ shredded cheese, chopped green onions {leave 1 aside for garnishment} and bacon, mixing together until well incorporated. Transfer ingredients to 3qt baking dish and cover with foil or lid.
5 Bake for 25 minutes. Remove foil or lid and sprinkle with remaining cheese, bacon and 1 chopped green onion, bake for additional 5 minutes until cheese melts.
