Since we are a family that seems to always be on-the-go I like to keep a few easy and delicious snacks to take along with us, just in case. It is no fun being on the road, at the park or running errands with kids when hunger strikes. Hunger can make kids cranky, irrational and all-around a little crazy - so I try to avoid it from happening at all costs! One of my favorite snacks to grab before heading out the door is Kellogg's Rice Krispies Treats - whether they be homemade or bought from the store. They're easy to pack, the kid's love them and they're one of my childhood favorites! I decided to make my kiddos {and myself} a special fall-inspired on-the-go snack: Caramel Apple Pie Rice Krispies Treats. Make a batch of these, stick them in sandwich bags, place them in the fridge and have a snack on-hand that will wow your little ones!
These Caramel Apple Pie Rice Krispies Treats have apple pie filling sandwiched in between two thin layers of homemade Rice Krispies Treats {spiced with ground cinnamon} topped with chopped walnuts and drizzled with melted caramel. These are not your momma's Rice Krispies treats! {unless you're my child...} Plus they are a cinch to make, the hardest part is flattening out the Rice Krispies treat mixture onto a baking sheet. So easy, so delicious and perfect for all ages!
I used an 18" x 13" baking sheet, lined with parchment paper, to press the Rice Krispies Treat portion of this recipe in. If that seems a little too big, or you're thinking the 24 treats that this recipes yields may be too much for your family, this recipe can easily be cut-in-half. Just use one baking sheet and cut the Rice Krispies Treat in half to create two layers.
This was my first time using canned apple pie filling and was quite impressed! Not only is it easier than making your own, it is still absolutely delicious. I just evenly spread the apples over the bottom layer of Rice Krispies Treats and then spooned whatever sauce was left over in any areas that weren't covered in apple slices.
After adding the apples I just put the second sheet of Rice Krispies Treats on top, sprinkled with chopped walnuts and pressed the two together. Using a sheet of parchment paper really helped to press them together evenly as well as avoid the mixture from sticking to my fingers.
Then I just used a spoon to drizzle on the melted caramel. Since the caramel sauce in jars and bottles won't harden unless cold {freezing} I opted to melt caramel candies that would set firm once cooled off. By using the candies instead of the sauce it also makes them less messy to pack and enjoy on the road!
Caramel Apple Pie Rice Krispies Treats

PRINTABLE RECIPE
Ingredients
6 tablespoons butter
1 teaspoon ground cinnamon
8 cups mini marshmallows
12 cups Kellogg’s Rice Krispies
1 21oz. can apple pie filling
2 cups chopped walnuts
20 soft caramel candies, melted
2 tablespoons milk
Directions
1 Line baking sheet with parchment paper.
2 Over low heat, melt 3 tablespoons butter in large saucepan. Stir in ½ teaspoon cinnamon. Add 4 cups marshmallows and stir until melted. Remove from heat and stir in 6 cups Rice Krispies until well coated. Press flat onto baking sheet. *I use another piece of parchment paper to avoid mixture from sticking to my fingers. Let cool.
3 Repeat steps 1 & 2.
4 Spread apple pie filling onto the top of one layer of Rice Krispies mixture. Top with other layer and sprinkle with walnuts. Press the two layers together. *Again, I use a piece of parchment paper to help avoid the mixture from sticking to my fingers. Let cool completely before cutting.
5 In a microwave safe bowl add caramel candies and milk. Heat on high heat for 30 seconds then stir. Keep heating in intervals of 30 seconds {and stirring} until mixture is smooth and melted.
6 Cut Caramel Apple Pie Rice Krispies Treats into 24 squares and then drizzle with melted caramel.
7 Store in airtight container in refrigerator. Enjoy!
