Chicken Pot Pie served with Easy Vegetable Soup #PotPiePlease

Pot pies are on the top of my list of comfort foods - one bite and it's like I'm sitting at the dining table in the house that I grew up in. I remember being young and thinking that it took forever for them to bake - because an hour when you're a kid is like an eternity! But it was always worth it. A warm savory pie with a golden, flaky crust. My mom always got us Marie Callender's Chicken Pot Pies, so I do the same for my kiddos. It's a family tradition now I guess you could say. Now that I am the parent I see pot pies as a wholesome dinner that I can easily make for my family and that are perfect for busy nights. And just like I did, my kids impatiently wait for the pot pies to get done baking. Every time.


The Marie Callender's Pot Pies come in a variety of sizes; 10oz., 16oz. and 45oz. - so I usually grab the 16oz. size to serve adults and the 10oz. size for the kiddos. The larger 45oz. is perfect for a family too. They also have a nice variety of flavors, from the classic Chicken Pot Pie to Cheesy Chicken + Bacon Pot Pie - something for everyone's taste.

I like to serve a side with our pot pie dinners, to make sure everyone's appetite is satisfied, and it's usually something super simple like a bagged salad. I recently switched things up and decided to try a Simple Vegetable Soup to serve alongside our pot pies and it turned out to be an idea that the whole family enjoyed. Plus, it's a simple soup to make since most ingredients can be found in the frozen section of the grocery store, already chopped and ready to cook. If you don't like one of the vegetables on the ingredients list, substitute it with one you prefer. This recipe is so easy to customize!


Seriously, what's more comforting than pot pie and a warm cup of soup? Especially when the pot pie tastes like the ones you remember from childhood! This was such a warm and cozy dinner, it was everything that I love about meals this season. And since I had both the oven and stove turned on the house was a little warmer than usual - which was perfect for this time of year.

Easy Vegetable Soup
yields about 12 cups
PRINTABLE RECIPE
Ingredients
2 tablespoons olive oil
1 medium onion, chopped
1½ cups chopped carrots
1 cup chopped celery
3 garlic cloves, chopped
1 teaspoon ground black pepper
1 teaspoon sea salt
8 cups chicken broth
2 cups chopped green beans
2 cups chopped butternut squash
2 cups lima beans
Directions
1 In large pot heat olive oil to medium heat. Add onion, carrots, celery, garlic, black pepper and salt and saute for 7-10 minutes or until carrots are tender.
2 Stir in chicken broth and bring to boil. Reduce heat to low and simmer for 5 minutes.
3 Add green beans, butternut squash and lima beans. Bring to boil, reduce heat and allow to simmer for 10 minutes.
4 Allow to cool before serving. Enjoy!
