Have you started making "the rounds" this holiday season? We officially kicked off our holiday mingling this past weekend and have no end in sight until the end of the year. It's the season of holidays, family gatherings, holiday parties and seasonal activities - there is a lot to do for the next 7 weeks! Since we are on-the-go so much this season I like to make sure we are also spending quality time with one another by making time for a weekly family brunch. The star of every one of these family brunches is the pancakes. So why not make some holiday-themed pancakes while we're in full swing of this festive season? I came up with these Cranberry-Orange Pancakes with Spiced Syrup and they did not disappoint one bit. The Mr. even said they were some of the best pancakes he's ever tried. And let me tell you - that man has eaten his fair share of pancakes!

Although we enjoyed these Cranberry-Orange Pancakes with Spiced Syrup as part of a cozy little brunch, they are easy enough to make and enjoy for a weekday breakfast as well. I'm all for making pancakes from scratch, but sometimes it's all about saving time - and since pancake mix uses less ingredients, time is saved. And I pinch seconds like I do pennies during this time of year... it's serious business. By using Aunt Jemima Pancake Mix I saved time in the kitchen and still enjoyed delicious, light and fluffy pancakes. Less time in the kitchen means more time with my family, and that's what this season is all about.
For the Spiced Syrup I just blended a few holiday spices {cinnamon, nutmeg and ground cloves} with Aunt Jemima Original Syrup and heated in the microwave. The flavors of cranberry and orange from the pancakes pair amazingly with the Spiced Syrup - a perfect combination for this time of year! We'll be making this recipe again this season. And then again. They are seriously that good!
Cranberry-Orange Pancakes with Spiced Syrup
yields eight 6” pancakes
PRINTABLE RECIPE
Ingredients
Cranberry-Orange Pancakes
2 cup Aunt Jemima Original Complete Mix
1½ cup water
2 eggs
2 tablespoon vegetable oil
⅛ teaspoon vanilla extract
1 cup chopped dried cranberries
zest of 1 orange
Spiced Syrup
1 cup Aunt Jemima Original Syrup
¼ teaspoon ground cinnamon
⅛ teaspoon nutmeg
⅛ teaspoon ground cloves
Directions
1 Stir together syrup, cinnamon, nutmeg and cloves. Heat in microwave for 30 seconds, stir, then heat an additional 30 seconds. Set aside.
2 Heat up your pancake cooking surface {pan, griddle, pancake maker, etc.}. I used a cast iron pan and heated it to medium-low, never needing to raise the temperature while cooking all 8 pancakes.
3 Whisk together pancake mix, water, eggs, vegetable oil and vanilla together. Slowly mix in chopped cranberries and orange zest.
4 Pour a scant ½ cup of mixture onto heated cooking surface. You can grease your pan beforehand, but it’s not necessary. Allow to cook until you start to see bubbles popping on the surface and the outer edges of pancakes are set, then carefully flip and cook for an additional minute.
5 Pile in a stack as you cook them to help retain their heat. Serve immediately. Enjoy!
I was able to locate both Aunt Jemima Pancakes Mixes {Original and Buttermilk} and Aunt Jemima Original Syrup at my local Walmart store, in the breakfast aisle.
