Peppermint Hot Chocolate Chex Mix

This Peppermint Hot Chocolate Chex Mix is a fun holiday-inspired snack to make before this season is over! With semi-sweet chocolate, crushed peppermints and mini marshmallows this is a fun snack-version of a favorite warm wintertime drink. Served in mugs {large or small}, this is a perfect holiday time treat to serve at holiday parties!

I love how easy it is to customize and make your own Chex Mix! I've always stuck to making the classic Chex Mix {a childhood favorite of mine}, which is packed with savory goodness but this year the holidays have given me a fierce sweet tooth - so I needed to make a Chex Mix full of holiday sweetness. It was my kiddos love of hot chocolate {marshmallows included} that inspired this recipe. Once our Christmas tree goes up hot chocolate becomes their choice beverage, wanting to drink it for breakfast, lunch and dinner. This recipe was so much fun to make with them in mind! Peppermint Hot Chocolate Chex Mix is definitely going to become a tradition at our house during Christmastime.

I found the crushed peppermint candies for this recipe in the bulk section at WinCo, one of my favorite grocery stores. Their bulk section has an amazing selection and great prices. Peppermint Hot Chocolate Chex Mix
PRINTABLE RECIPE
yields approximately 7 cups
Ingredients
2 cups Corn Chex
4 cups Chocolate Chex
½ cup crushed peppermint candies
1 cup semi-sweet chocolate chips
¼ cup butter
¼ cup sweetened condensed milk
2 cups mini marshmallows
Directions
1 In microwave-safe bowl mix together Corn Chex and Chocolate Chex.
2 Heat chocolate chips and butter together in microwave for 1 minute on high. Stir and heat for an additional 30 seconds. Stir until smooth. Stir in sweetened condensed milk and heat for an additional 30 seconds.
3 Pour chocolate mixture over Chex mixture. Using a spatula, carefully mix the chocolate into the cereal. Heat in microwave for an additional 3 minutes, stirring every minute.
4 On a flat surface {I use a baking sheet lined with parchment paper} spread mixture out. Pour marshmallows on top and toss. Let cool.
5 Break any big pieces apart, enjoy immediately and store leftovers in an airtight container.
