Spicy Shrimp with Sweet Grapefruit Glaze

These Spicy Shrimp with Sweet Grapefruit Glaze are easy enough to prepare as a weeknight dinner yet wonderful enough to be served to guests on the weekend. Succulent large shrimp are first sautéed with chili-garlic sauce and cilantro, then finished with a sweet grapefruit glaze. The fiery notes of this dish are perfectly complimented with a tart sweetness from the grapefruit glaze.


My fruit-loving kids have been on a grapefruit kick lately and those bags of Sweet Scarletts Texas Red Grapefruit have been calling to me. "Make something with me!" So, I obliged - because how could I say no to that sweet face?


We have been enjoying these sweet grapefruits in the morning with breakfast {a splendid way to start the day with half of a grapefruit containing 100% the daily value of vitamin C!} so I decided to switch things up and add them to a savory dinner dish. My kiddos like spicy dishes, but nothing too hot - so this recipe for Spicy Shrimp with Sweet Grapefruit Glaze was perfect! The natural sweetness of grapefruit works fabulous to tone-down the heat in this dish and I love that there's no sugar involved, just natural fresh-squeezed goodness. These shrimp are the perfect marriage of sweet and spicy, not to sweet and not too spicy - and absolutely fabulous on your taste-buds.


Spicy Shrimp with Sweet Grapefruit Glaze
PRINTABLE RECIPE
Ingredients
½ cup fresh squeezed grapefruit juice
1 tablespoon olive oil
1 tablespoon raw honey
1 teaspoon grapefruit zest, diced

1lb large shrimp, deveined and shelled {leave or remove tails}
1 tablespoon olive oil
2 tablespoons chili-garlic sauce {found in ethnic aisle of grocery store}
1 teaspoon diced cilantro

Directions
1 In small saucepan stir together grapefruit juice, olive oil, raw honey and grapefruit zest. Bring to boil, lower heat and let gently simmer.
2 In skillet heat olive oil and chili-garlic sauce over medium-high until just starting to bubble. Add shrimp and sauté for 5-7 minutes, until shrimp has turned pink and sauce is mostly gone. Add grapefruit sauce, stir to evenly coat and simmer for 2-3 minutes. Most sauce should be evaporated.
3 Serve warm and enjoy! {we enjoyed ours with white rice, zucchini, and grapefruit slices}
